Our philosophy

The love for our land is reflected in our choice of organic cultivation.

For the past twenty-five years, Palazzo Centofanti Winery has been engaged in a process of renewal and experimentation in the vineyard, aiming to improve both vineyard management and the quality of the grapes produced.

After conducting several trials with planting layouts on small plots — and introducing micro-diversifications to evaluate the final results — we concluded that the double curtain system is the planting method best suited to the microclimate of Giuliano Teatino.

The double curtain ensures excellent aeration of the grape clusters, reducing the conditions favorable to the spread of botrytis. It also provides optimal shading, allowing the grapes to ripen through reflected sunlight rather than direct exposure.

This planting system also significantly facilitates manual tasks such as green pruning and harvesting.

Our philosophy is based on meticulous vineyard care, ensuring that only the finest grapes, with well-balanced sugar and acidity levels, are brought to our cellar.

Through the application of modern oenological techniques, implemented by our esteemed oenologist Jacopo Centofanti, these grapes are transformed into the structured, long-lived, and characterful wines that define our estate.
