Tasting notes:
Clear, pale straw yellow with greenish reflections, this Pecorino has good body and consistency. The nose is intense, with delicate fruity aromas of yellow plum and medlar, accented by citrus notes and subtle vegetal hints that add complexity and finesse. On the palate, it is dry, fresh, and well-balanced, with a harmonious sapidity that is never overpowering. Medium-bodied, intense, and persistent, it offers a light fruity-floral return and a delicate almond finish.

Thanks to its freshness and balanced sapidity, this Pecorino is ideal as an aperitif and pairs perfectly with light starters such as stuffed olives, battered vegetables, and fried seafood. Excellent also with seafood pasta, risottos, and vegetable-based pasta dishes. Complements delicate grilled or baked fish and shellfish. Served chilled, it fully expresses its fruity and citrus notes and its pleasant lingering finish.

Harvest period: First ten days of September

Vinification: Gentle pressing of the grapes followed by fermentation of the clear must in small stainless steel tanks at low temperature.

Aging: Stainless steel aging in contact with the lees for approximately 4 months, followed by bottling.
