Vino Cotto, dessert wine
Vino Cotto represents a handcrafted excellence from the Abruzzo Region, made using a rigorous and traditional production process.
The must from Montepulciano d’Abruzzo grapes undergoes a slow cooking until fully reduced, concentrating natural aromas and sugars.
Then, fresh "mosto fiore" (free-run juice) is added to the cooked must, and the resulting blend is aged for a long time in wooden barrels.
The result is a dense and structured dessert wine with an alcohol content of about 15%.
The color is dark and deep, while the nose reveals spicy aromas and hints of dried fruit.
On the palate, Vino Cotto is balanced, with a smooth sweetness and a vibrant acidity that ensures its freshness.
Production is limited and carried out with artisanal methods passed down through generations, emphasizing the strong bond with local tradition and territorial quality.
A distinctive feature of this tradition is that Vino Cotto is produced each time a child is born in the family, a symbolic gesture of life and continuity.
Vino Cotto pairs well with many foods: it is excellent with dry pastries, aged cheeses, especially blue cheeses, but can also be enjoyed alone as a refined after-dinner wine.
