How the rhythm of nature shapes every vintage at Palazzo Centofanti
Working daily among our vineyards, we’ve learned that wine is born not only from the soil, but from time. Each season plays a crucial role in shaping the final quality of the wine: the climate, rainfall, sunshine, winds… everything leaves its mark. As a family dedicated to organic viticulture for generations, we know that respecting nature’s timing is the first ingredient of a truly great wine.
Winter – The vineyard at rest
After harvest, the vines enter a deep sleep. Leaves fall, and the plant’s energy shifts to its roots. This period of stillness is essential: cold temperatures help regenerate the vine, naturally reduce disease, and prepare the buds for the coming season. During these months, we carefully prune the vines and tend the soil with natural methods, letting it breathe and renew.

Spring – Awakening
With the first warm days, the vineyard awakens. This is a delicate time: flowering marks the beginning of the growing cycle, and weather fluctuations can significantly impact the number and quality of grape clusters. Balance between rainfall and sunshine is key. We monitor everything closely, encouraging biodiversity and using only natural treatments.

Summer – Sun, ripening… and harvest
Summer is the season of light, warmth, and anticipation, but for us, it’s also the beginning of the harvest. Starting in August, we begin picking: a pivotal moment when each bunch tells the story of the entire year. The summer sun ripens the grapes, concentrating sugars, acidity, and aromas. We observe every parcel carefully, hand-harvesting only when the fruit has reached the perfect balance. It’s a slow, thoughtful process that honors the raw material.

Autumn – From vineyard to cellar
As autumn arrives, the late-ripening varieties reach maturity, and the final stages of harvest wrap up. But the focus now shifts from the vineyard to the cellar. This is when the must becomes wine: fermentation begins, followed by racking, tasting, and the first evaluations. It’s a crucial phase, where experience and intuition make all the difference. While nature slows down outside, inside our barrels, the future begins to take shape.

At Palazzo Centofanti, we believe that making wine means listening to nature. That’s why all our labels are certified organic, DOC and IGT Terre di Chieti, and always small-batch, to preserve the authenticity of the land we love. Our wines speak the language of the seasons, the soil, and the passion of a family.
